It is also smooth, helping reduce the ‘grittiness’ in gluten free breads and cakes.
Tapioca is a very versatile product, used in the bakery industry, for binding, thickening and to add body.
It is also used in cheese making, small goods manufacturing, ice-cream, etc apart from the well known forms of grandma’s sago puddings, or the more modern forms of bubble tea (with tapioca pearls).
